The processing
Most of the harvesting is done by machine, the processing is natural. The coffee cherries are dried in the sun and/or by machine. The screening and sorting is then done again by machine.

The region
The Cerrado region is a flat landscape with no major elevations. This allows coffee farmers to grow their coffee in rows – similar to vineyards. Harvesting is done using machines that shake off most of the coffee cherries. The remaining cherries are then harvested again by hand.
In the Cerrado region, coffee trees bloom once a year. That's why there is only one harvest per year. In addition, the coffee trees are partially irrigated because this irrigation stimulates flowering at a specific time. Otherwise, irrigation occurs during vegetative growth in order to counteract a lack of natural precipitation.

Cup profile
This fine and soft coffee has almost no acid and is very gentle on the stomach. Nicely balanced, the coffee has notes of chocolate and a hazelnut taste on the finish.
